My 3 Best Cookie Baking TipsI am pretty sure I have more cookie recipes on the blog than any other dessert. After baking hundreds of cookies if not thousands of cookies I wanted to share a few of my best cookie-baking tips with you. 1. Measurements MatterYou may have heard the saying cooking is an art, baking is a science. Accuracy in measurement matters when baking. The most accurate way to measure ingredients is by weight using a kitchen scale. One of the things I look for when judging if a recipe is good or not is whether or not they provide ingredient amounts by weight. If you don't have a kitchen scale, that doesn't mean you can still bake delicious cookies. The most common ingredient that gets measured incorrectly by volume is flour. When measuring flour use a spoon to scoop the flour into your measuring cup and then use the back of a knife to level the top. 2. Don't Over-Mix Cookie DoughThe first step of most cookie recipes is to cream together the fat and sugar. Mix the ingredients only as long as you need to. (Most recipes will specify a certain amount of time.) Whipping too much air into the dough will cause your cookies to collapse as they bake. Once you add the flour, only stir the cookie dough until all of the flour has been absorbed. Overmixing at this stage will create too much gluten causing your cookies to be tough and crumbly. 3. Always Chill Your DoughI know it's tempting to bake delicious cookies right away. But if a recipe says to chill the dough don't skip that step. Chilling cookie dough firms up the fat in the dough and allows the flour to fully hydrate which decreases the chances of your dough spreading too much in the oven. Cold cookie dough is much easier to handle and shape. After chilling, let the cookie dough sit at room temperature for about 10 minutes before portioning and baking.
